The Cubbard Restaurant and Bar was designed and built by Mel Kling Jr. a culinary graduate from the French Culinary Institute in Manhattan. Being a new concept restaurant, the idea was to bring quality food, upscale from what most franchise restaurants deliver to their customers without sacrificing the speed in which it appears at your table. Using fresh ingredients and homemade sauces compared to canned soups and sauces would set The Cubbard above what most people now are used too. Sautéing your vegetables instead of microwaving allow you to deliver a plate of food that looks and tastes as if it was made at home. To create this environment of cooking we had to computerize our entire kitchen so the times of cooked food would regulate not only how orders come out, but allow us to sauté to order so everything comes out fresh to EVERY table.
